A Little Comfort

I have had a longing for pancakes these last few weeks.

Now, specific pancakes. These pancakes are more French Crepe

than American style. It felt like years since I had had a golden lace pancake.

It is amazing how three simple ingredients in a pan over a medium heat can produce comfort food. The recipe is from my sister who makes amazing pancakes. I do not know what she does but they are delicious and very moreish (if there is such a word.)

So if you would like some comfort food grab 110g of plain flour, an egg and 250ml of milk and just combine to make a smooth batter. My pancake pan finally gave up so I had to use a frying pan which meant large crepes to soak up the maple syrup which I prefer. However if a pancake shouts lemon juice and sugar go for it. I know someon who puts a hazlenut spread on the pancake once it has been flipped and then rolls it up so that the spread begins to melt and ooze.

Pancakes may not be fine dining but they are comforting.
