More Freezer Scraps

I am at the stage of using up everything which is in the freezer. Normally this is something I enjoy but I hadn’t realised just how many salmon darnes I had.

Now I know that all the chefs will say it is better not to over cook salmon. It should be opaque and still a little resistant. Well I like my salmon well done. I like it to flake into pieces.

My “go to” recipe is seasoned darne on sliced peeepr with slices of lemon on top all wrapped in parchment paper then into the oven.

Today I wanted something different so I grabbed a bag of salmon and the bag underneath it. When it thawed this bag had pieces of bacon. Bacon and salmon? To be honest I wasn’t too sure but after another hot day I really didn’t care.

I covered a shallow dish with parchment. The salmon I just seaasoned with some white pepper really just a sprinkling. I finely sliced a small onion and put that on top of the salmon. Then I sliced the bacon so that I had mini rashers. These I placed on top of the onions.

With the oven heated at 180C I scrunched up the parchement paper around the salmon but left the bacon totally exposed. in another dish I halved some salad potatoes and very lightly oiled them. 30 minutes later the smells were wonderful and dinner was ready.

Yes bacon and salmon do go well together. The next time I might add a chilli again to give a twist.

Definitley another great pot luck meal with enough left over for luch tomorrow.
